Schabziger or sapsago is traditional cheese exclusively produced in the Canton of Glarus in Switzerland.
Schabziger is made from skimmed cow’s milk and a special herb, blue fenugreek, also known as blue melilot. The journey begins early in the morning on an alpine pasture, where the sun rises over the peaks, bathing the landscape in golden light. Cows are milked directly on the meadow, and the fresh milk is immediately processed on-site. The resulting cheese then matures over several months, developing its unique flavor.
